General Manager, Bob Colosimo

Robert “Bob” Colosimo was born and raised in Warren, PA and upon graduation from high school attended the Culinary Institute of America, Hyde Park, NY graduating in April 1980.Bob began his traveling career in 1981 joining Holland America Cruise Line sailing on board several oceangoing cruise ships including a world cruise in 1984.In 1984, Bob joined  St. Louis based Clipper Cruise Line as executive chef and eventually became responsible for the entire food service operation for all four Clipper Cruise Line  ships. During this period, Bob had the opportunity to work on passenger river boats in Europe and on the American Orient Express Luxury Train.  Bob also has worked as an adjunct instructor at St. Louis Community College, Forest Park.Bob has been General Manager & Executive Chef for Eleven Eleven Mississippi since September 2008. During this period, Bob has participated in several charity events sponsored by the restaurant and teaches culinary classes at Moulin Events & Kitchen Conservatory.Bob joined the Chefs de Cuisine Association of St. Louis in 1993 and is a Certified Executive Chef and Certified Culinary Administrator. Bob has served on the Educational Foundation Board since 2006 and is currently on the advisory board of St. Louis Community College and The Culinary Institute of St. Louis at Hickey College. Bob has enjoyed competing in several ACF certified competitions in recent years.Bob lives in Crestwood with his wife Lisa and their three children, Patrick, Dominick and Gianna.

 Trevor Ploeger, Executive Chef

Born and raised in Sioux City, Iowa, Trevor attended culinary school in Minneapolis, MN at a Le Cordon Bleu school following high school. Trevor moved to St. Louis in 2004 where he began working at Sunset 44 in Kirkwood, quickly working his way up to Head Chef. After 6 years at Sunset 44 Trevor continued to sharpen his skills going to work at Old Hickory Golf club eventually working his way up to Executive Chef.

In 2013 Trevor joined the Hamilton Hospitality Team working as a Sous Chef at Vin de Set, after almost a year Trevor was given an opportunity to become Executive Chef at Eleven Eleven Mississippi. With all of the experience Trevor continues to gain he hopes to open his own restaurant.

In March of 2016 Trevor was picked to compete in the Feast Magazine Food Fight featuring 10 up and coming chefs, Trevor’s dish won the competition and is currently featured on Eleven Eleven’s menu.

Trevor loves to spend time with his family, he and his wife Meghan have 2 children: a son- Collin and a daughter- Hayden.

Jason Arnold, Managing Partner, Moulin Events and Meetings, Vin de Set, PW Pizza & 21st Street Brewers Bar

Jason Arnold is the Managing Partner and joined the Hamilton Hospitality team in 2006 as part of the opening team for the renovation and operation of the building at 2017 Chouteau Avenue.   He currently oversees facility operations and has a team of twenty five managers, chefs and sales professionals that report to him.

Jason has been in the hospitality business for more than three decades, from hotels and resorts to cruise lines and restaurants. After graduating from the Cornell University, School of Hotel Administration, he worked for Hyatt Hotels and Resorts as the Banquet Manager and Beverage Manager in Aruba and Pittsburgh, PA. A couple of years into his Hyatt career, he was hired into the Clipper Cruise line family and thus began the long friendship with Paul and Wendy Hamilton, Scott Gaghan and Bob Colosimo.

As the Director of Purchasing for Clipper Cruise line, Jason was afforded the opportunity to travel on five continents while learning and experiencing local food and wine customs, ingredients and purchasing them for the ship’s arrival. When the opportunity to return home to upstate New York and run a group of TV stations with friends arose, Jason changed gears and took over operations for Lilly Broadcasting LLC.

For more than six years, Jason and his family lived in the beautiful Finger Lakes region of New York while running the local ABC and WB Television stations, making them the number one group in the market. This experience prepared Jason with the financial and marketing acumen to return to St. Louis and work with longtime friends overseeing the creation and opening of Vin de Set Rooftop Bar and Bistro, Moulin Events, the Malt House Cellar, PW Pizza and 21st Street Brewer’s bar. Jason works closely with the team at Moulin Events which has grown from 3 private rooms to eight private rooms and multiple house created events.

In 2008, Jason created the Centennial Beer Festival, which is now one of St. Louis’ premiere craft beer festivals attracting over 80 breweries and 2,000 guests. Jason’s passion for the history and re-birth of the St. Louis Brewery scene has guided the company’s beer program that includes year round collaborations with local, domestic and international breweries at all the businesses.

Jason is married, has two children and is very involved in the United Way and the Food Bank of St. Louis. He is also a member of the Cornell Hotel Society and serves as a trustee for New York Alpha Alumni Organization.
